Baked Cod This recipe is a real winner! We just love it! 1 to 1-1/2 pounds cod fillets 1-1/4 cups panko crumbs 2 tablespoons dry parsley 1 cup flour Old Bay seasoning 2 large eggs Heat the oven to 425°. Cut fish into equal-size pieces. Prepare three bowls big enough to dip the fish pieces, then coat or dip each piece of fish in this order: 1. Flour seasoned with salt, pepper, and Old Bay (or you can use a paper bag and shake one or two pieces of fish at a time) 2. Beaten egg. 3. Panko crumbs and parsley. Press lightly to help crumbs adhere to the fish. Arrange the fish on an ungreased baking pan. Bake for 16 to 20 minutes, or until fish flakes easily. The time in the oven depends on thickness, so adjust for very thin or thick fillets. Serve with tartar sauce.
