Butternut Squash Oven Fries 1-2 butternut squash oil salt pepper Select squash with as long and large a neck as possible. Make sure the stem isn't black and old looking. Preheat oven to 450°F. Cut squash lengthwise, then remove the ends and separate bulb end from neck end. Remove seeds from bulb end pieces, then slice lengthwise into strips 5/8" wide. Also slice neck pieces lengthwise 5/8" wide. Then peel each piece and julienne into 5/8" diameter dinner fry shape as best you can. There are youtube videos showing how to cut up butternut squash if you need a reminder. Toss fries in bowl with a couple tablespoons oil, spread out on baking sheets, and sprinkle with salt and pepper. When oven comes to temp, roast 20 minutes, then flip fries over and roast another 10-15 minutes. You want a definite darkening - where the edge of the fry darkens and gets crisp, it tastes delicious. Remove from oven and serve IMMEDIATELY. In the first 2-3 minutes these are WONDERFUL. These don't work great as leftovers, so make only as many as you will eat at a sitting, and refrigerate any cut uncooked fries to cook later. They will keep several days in the refrigerator.
