Rhubarb Orange Jam Alex found this recipe online and modified it slightly. It's DELICIOUS! I like it in yogurt. https://www.allrecipes.com/recipe/86346/rhubarb-jam/ 2.5 pounds chopped rhubarb 1 to 1.5 cups sugar (1 cup worked fine but isn't as flavorful) 1/3 c orange juice zest of one orange (optional; adds zing) 1/2 cup water 1 box pectin (optional; adds nice texture) In a saucepan, combine the rhubarb, sugar, orange zest, orange juice, and water. Bring to a boil, then cook over medium-low heat for 45 minutes, stirring occasionally, or until thick. It will thicken more as it cools. Add pectin if desired.
