Sopa de Res 3.5 lbs beef chunks 1 package short ribs 8 guajillo peppers 2 ancho peppers 10 chiles de arbol 3 tomatoes 1 tablespoon Mexican oregano 5 bay leaves 1 large clove garlic, peeled 5 cloves 5 aguacatillo leaves thyme 1 quart cooked garbanzo beans 5 allspice berries (peppercorns?) 1/2 onion 2 tablespoons salt Add peppers and tomatoes to pot of hot water. Bring to slow simmer. Add meat to large pot and begin browning. Remove peppers and tomatoes to blender jar. Add remaining ingredients except for salt, garbanzos and allspice berries. Add 1-3 cups of water. Blend until smooth. Pour into large strainer over meat pot. Agitate with spoon. Add 2 cups water and continue to "food mill". Add salt, garbanzos and whole allspice berries. Simmer for 3 hours. Serve with minced white onion, chopped cilantro, lime and green salsa on the side.
