Sweet Potato Black Bean Burgers This is my favorite bean burger recipe so far. Yield ~9 1 cup mashed sweet potato 1 & 1/2 cups oats 1 cup mashed black beans 1/2 tsp salt 2 tsp onion powder 1 tsp cumin 1 tsp smoked paprika 1/2 tsp black pepper Preheat oven to 375. Pulse oats in food processor until coarsely ground. Combine all ingredients. It should be very moist but moldable. Place ice cream scoop size balls on lightly greased baking sheets (5 or 6 per sheet). Flatten with spatula. Bake burgers for a total of 30-40 minutes, flipping 20 minutes in to ensure even cooking. The longer you bake them the firmer and drier they will get. Freezing instructions: partially bake for 20 minutes, let cool, layer between pieces of parchment paper in a freezer bag or container. Reheat frozen at 375 degrees F for 20-25 minutes until desired firmness.
