Vegan Mock Meatloaf This is absolutely delicious, and amazingly meatloaf-like. From Blue Zones cookbook. This is a Seventh Day Adventist recipe. 2 cups breadcrumbs (Whole wheat is fine. I pulsed stale bread in the Cuisinart until coarse but not fine crumbs) 2 cups walnuts, finely ground 1/2 cup oats, coarsely ground (recipe calls for instant, but I used old fashioned and it worked great) 1 large onion, chopped 2 stalks celery, chopped 3 Tbsp ketchup 2 Tbsp vegetable oil 1 tsp poultry seasoning (or equivalent, e.g., sage, thyme, rosemary, marjoram, nutmeg, salt, pepper) 1 Tbsp garlic powder 1/4 cup milk (plant-based or regular) grated carrot or summer squash, optional Preheat oven to 375 Combine breadcrumbs, walnuts, and oats in a large bowl Pulse onions, celery, ketchup, and oil in Cuisinart until broken down but not pureed; add to dry ingredients Add remaining ingredients to bowl and mix well Add more milk if needed until mixture is moist but not wet Pack into greased 9x5 loaf pan and cover with foil Bake at 375 for 70 minutes Remove foil and bake for 10 more minutes until tester comes out clean Let cool 10-15 minutes before slicing Serves 6 @ 446 calories, 12 grams protein Serves 8 @ 335 calories, 9 grams protein
