Corn Meal Griddle Cakes 2 cups cornmeal, yellow or white 1 teaspoon salt (omit or reduce if butter is salted) 2 teaspoons baking powder 1/4 cup sugar 4 tablespoons, bacon drippings or melted lard, optional but highly recommended 3/4-1 pint of buttermilk 4 tablespoons bacon fat, lard, or melted butter Combine together the cornmeal, salt, sugar and baking powder. Add the melted fat and buttermilk. Start with 1 cup of buttermilk and add, stirring, until the mixture is the consistency of pancake batter. Cook like pancakes. Preheat a griddle (or skillet) to 400°F, then lightly oil and add a scant ladleful of batter. Keep an eye on the griddle temp - if it gets up over 500 it will start smoking. Peek under the edges. These have a tendency to stick, so beware and take it easy with the spatula. These are real good with honey.
