Festive Waldorf Salad Salad Ingredients: 8 medium apples, washed, cored & chopped into bite-size chunks 4 large sticks of celery, washed, peeled and diced 1 6 oz. bag of dried cranberries (Craisins - Original) big double handful of firm red seedless grapes, washed & halved big handful of walnuts green part of 2 stalks of green onion, snipped fine Dressing Ingredients: 2 egg yolks 1 tablespoon sesame oil Additional corn oil to make 1 cup oil total Add white vinegar to juice of one small lemon, 2 tablespoons total 1/4 teaspoon salt Prepare dressing as homemade mayonnaise (I use the KitchenAid mixer). Chop the apples first. As each apple is cut up and added to the bowl, mix it with some of the salad dressing to coat, this keeps the apple from turning brown. When the apples are all cut into the bowl, add all the rest of the dressing (if any) and toss to coat, then chop in the celery and green onion and red grapes and add the dried cranberries. Toast the walnuts in a 350° oven for 10 minutes, tossing occasionally, then chop coarsely and add and toss salad. Prep time about an hour, really great recipe for an autumn festive dinner if you have fresh apples in your yard.
