UGALI 2 cups white corn flour 4 cups water Boil water. To the boiling water add flour 1/2 cup at a time. After each addition of flour, stir vigorously to combine, until the water returns to a boil. Work in corn flour until the mixture becomes like a stiff dough. Cook on low heat until the ugali pulls away from the side of the pan. Optional: add butter and/or sugar SUKUMA WIKI 1 large bunch chard (any type) per person 1/2 to 1 onion 1/4 cup oil 1/2 tablespoon salt Before you start, cut the large main rib out of the leaves. Then wash the leaves and put them in a colander and shake it to remove most of the water. Roll the leaves up tightly and cut it into 1/4" strips, working in batches. Put the cut up greens in a big bowl. Chop the onion somewhat finely. About 10 minutes before dinner, add oil and onion to a heavy pot and cook a few minutes until the onion is translucent. Then add the greens and salt. Stir to combine greens with oil and onion. Turn the heat to lowest and put the lid on. After a few minutes the dish will be ready to serve. Optional: add chopped tomatoes and/or hot chiles or red pepper seeds
