Spanish/Mexican Rice 1 cup basmati rice 3/4 cup Safeway salsa (mild, medium, or hot) 2 cups broth or water Preheat a heavy pot Add the rice and stir well to toast Add salsa and broth or water and bring to a boil Simmer, covered, until done Note: Brown basmati rice usually takes 35 minutes. The original version of this recipe called for sauteeing the rice in oil, but this coats the rice and makes it hard for it to absorb water, so it took a lot longer to cook.
