General Tso's Tofu ~ 4 servings 1.5 cups quinoa or rice, uncooked (or use noodles) 2 tubs extra firm tofu 4 cloves garlic 2 oz fresh ginger 4 green onions 4 Tbsp tamari or soy sauce 6 Tbsp sugar (half brown and half white) - this seems like a lot; I'd start with less 2 Tbsp rice vinegar 1/2 cup cornstarch 2 Tbsp sesame seeds 12 oz broccoli florets Cook the quinoa, rice, or noodles Drain tofu, pat dry, cut into 1-inch cubes Cut green onions into 1/2-inch pieces Steam broccoli until tender Ginger Garlic Sauce: Mince garlic and ginger Mix in bowl: garlic, ginger, vinegar, tamari, sugar (add 1 Tbsp at a time and taste) Toss in a bowl: tofu, cornstarch, half the sesame seeds, a pinch of salt and pepper Fry tofu in oil until crispy Add green onion and saute until tender Reduce heat, add ginger garlic sauce, toss to coat, thicken about 30 seconds Put tofu and broccoli on top of rice Sprinkle with sesame seeds
